Tortilla Española: The Classic Spanish Omelet

Tortilla Española, or Spanish omelet, is a simple yet delicious dish made with potatoes, eggs, and onions. Perfect for breakfast, lunch, or tapas!

Ingredients (Serves 4-6)

  • 6 eggs
  • 4 medium potatoes, peeled and sliced thinly
  • 1 onion, finely chopped
  • 200ml extra virgin olive oil (available in our store)
  • Salt to taste

Instructions

  1. Heat olive oil in a large pan and add the sliced potatoes and onion. Cook on low heat until soft but not browned.
  2. Drain the potatoes and onion, reserving some of the oil.
  3. In a bowl, beat the eggs with salt, then mix in the cooked potatoes and onion.
  4. Heat a bit of the reserved oil in the pan, pour in the mixture, and cook on low heat for 5 minutes.
  5. Flip the tortilla using a plate and cook the other side for another 5 minutes.
  6. Let it rest for a few minutes before slicing.
