
Gazpacho Andaluz: A Refreshing Spanish Classic

This cold tomato soup is perfect for summer days, offering a refreshing and healthy taste of Andalusia.
Ingredients (Serves 4-6)
- 1kg ripe tomatoes
- 1 cucumber, peeled
- 1 red bell pepper
- 1 small onion
- 1 clove garlic
- 3 tbsp extra virgin olive oil (available in our store)
- 2 tbsp sherry vinegar (available in our store)
- 200ml cold water
- Salt to taste
Instructions
- Chop the tomatoes, cucumber, bell pepper, onion, and garlic into small pieces.
- Blend all ingredients until smooth.
- Add olive oil, vinegar, and salt, then blend again.
- Refrigerate for at least 2 hours before serving.
- Serve cold, garnished with chopped vegetables or croutons.
