Gazpacho Andaluz: A Refreshing Spanish Classic

This cold tomato soup is perfect for summer days, offering a refreshing and healthy taste of Andalusia.

Ingredients (Serves 4-6)

  • 1kg ripe tomatoes
  • 1 cucumber, peeled
  • 1 red bell pepper
  • 1 small onion
  • 1 clove garlic
  • 3 tbsp extra virgin olive oil (available in our store)
  • 2 tbsp sherry vinegar (available in our store)
  • 200ml cold water
  • Salt to taste

Instructions

  1. Chop the tomatoes, cucumber, bell pepper, onion, and garlic into small pieces.
  2. Blend all ingredients until smooth.
  3. Add olive oil, vinegar, and salt, then blend again.
  4. Refrigerate for at least 2 hours before serving.
  5. Serve cold, garnished with chopped vegetables or croutons.
