
Fabada Asturiana: The Hearty Spanish Bean Stew

A rich and flavorful stew from Asturias, made with white beans, chorizo, and morcilla.
Ingredients (Serves 4-6)
- 500g Asturian white beans (available in our store)
- 2 chorizos (available in our store)
- 1 morcilla (available in our store)
- 200g pork belly
- 1 tbsp paprika
- 2 bay leaves
- Salt to taste
Instructions
- Soak the beans overnight in cold water.
- Drain and place in a large pot with the chorizo, morcilla, and pork belly.
- Cover with water, bring to a boil, and skim off the foam.
- Add paprika, bay leaves, and salt. Simmer for 2 hours.
- Remove the meat, slice it, and return it to the stew. Serve hot.
