Fabada Asturiana: The Hearty Spanish Bean Stew

A rich and flavorful stew from Asturias, made with white beans, chorizo, and morcilla.

Ingredients (Serves 4-6)

  • 500g Asturian white beans (available in our store)
  • 2 chorizos (available in our store)
  • 1 morcilla (available in our store)
  • 200g pork belly
  • 1 tbsp paprika
  • 2 bay leaves
  • Salt to taste

Instructions

  1. Soak the beans overnight in cold water.
  2. Drain and place in a large pot with the chorizo, morcilla, and pork belly.
  3. Cover with water, bring to a boil, and skim off the foam.
  4. Add paprika, bay leaves, and salt. Simmer for 2 hours.
  5. Remove the meat, slice it, and return it to the stew. Serve hot.
